Making Your Own Mayonnaise

Have you tried making your own mayonnaise? 

 If not, I’d highly recommend it. It’s easy and so much tastier than what you can find it the store. Store bought mayonnaise’s number one ingredient is soybean oil 😖 we can do better than that! 

Ingredients

  • 1 whole egg

  • 1 cup neutral tasting oil (I use avocado)

  • 2 tablespoons vinegar

  • 2 tablespoons mustard

  • 1 tablespoon lemon juice

  • pinch of salt

Directions 

1.) using a food processor, process the egg for about 30 seconds

2.) add mustard, process additional 30 seconds

3.) add vinegar, salt, and lemon juice, process 30 seconds

4.) add oil in S L O W L Y while continuously processing, drop by drop until about a quarter has been added, after 1/4 cup the slowness can be slightly liberated, but you’ll still want to add it very slow 

Tips

  • olive oil is not a neutral tasting oil, I’ve tried several times with olive oil, absolutely would not recommend

  • I’m a huge believer in adjusting to taste along the way. I tend to like my mayonnaise a little more tangy, so I add in more vinegar

  • this recipe uses raw egg. I am comfortable using my chickens raw eggs, but I would not be comfortable eating raw eggs from the grocery store 

  • use room temperature ingredients, it will help the emulsification process

  • don’t be afraid to get creative, I’ve always hated dumping pickle juice down the drain, now I use it in mayonnaise and it is SO GOOD
